PCG Foods: Date Cookies

I recently came across this cookie recipe, and my kids are devouring them by the tray-load! They’re super tasty and easy to make.

Ingredients

  • 1½ cups oats
  • 1½ cups dates
  • ½ cup nut butter (I prefer almond)

Instructions

  • Soak the dates in boiling water for at least 10 minutes. Preheat the oven to 350˚F (175˚C) and line a baking tray with parchment paper.
  • Add the oats to a food processor and blitz until it becomes a flour. Add the nut butter and dates and process until the dough sticks together when you pinch it.
  • Roll and flatten tablespoon size balls of dough until they resemble a cookie (they won’t spread out when they bake).
  • Bake for 10-12 minutes (rotating the baking tray halfway through) until the bottoms are browned (the tops don’t really change color).
  • Let cool on the baking tray for 10 minutes and then transfer to a wire rack. They keep for up to a week in a sealed container. However, they never last that long in my kitchen. :)
