Want to branch out from or add a salad as your vegetable side course? This slaw goes well with Mexican-style cuisine and adds a nice alkaline crunch on top of chili.
Ingredients
- 1 small head red cabbage*
- ¼ cup cilantro
- ¼ cup green onions
- ⅛ cup red bell pepper (finely chopped)
- 1 lime
- 1 tbsp chili powder
- 1-3 tsp sea salt
- 1-2 tsp honey
Instructions
- Cut the red cabbage in half, cut out the core and then shred the cabbage. Place it into a bowl.
- Dice up the green onions and cilantro. Add these and the red bell pepper to the bowl with cabbage.
- Zest one lime over top of cabbage mixture, then juice the lime and pour on top.
- Sprinkle with chili powder and salt, and drizzle on honey. Use tongs to mix and serve.
*Adjust seasoning amount depending on the size of your cabbage and personal taste.
