PCG Foods: Red Cabbage Slaw

Want to branch out from or add a salad as your vegetable side course? This slaw goes well with Mexican-style cuisine and adds a nice alkaline crunch on top of chili.


  • 1 small head red cabbage*
  • ¼ cup cilantro
  • ¼ cup green onions
  • ⅛ cup red bell pepper (finely chopped)
  • 1 lime
  • 1 tbsp chili powder
  • 1-3 tsp sea salt
  • 1-2 tsp honey


  • Cut the red cabbage in half, cut out the core and then shred the cabbage. Place it into a bowl.
  • Dice up the green onions and cilantro. Add these and the red bell pepper to the bowl with cabbage.
  • Zest one lime over top of cabbage mixture, then juice the lime and pour on top.
  • Sprinkle with chili powder and salt, and drizzle on honey. Use tongs to mix and serve.

*Adjust seasoning amount depending on the size of your cabbage and personal taste.
