PCG Foods: Energy Bites

These are great for after school snacks and will keep for a while in the refrigerator.


  • 2 cups rolled oats
  • 1 cups walnuts
  • ¾ cups fresh ground flax seeds
  • 1 cup peanut butter
  • 2-3 tbsp honey
  • ¼ cup coconut oil
  • 2 tbsp chia seeds (optional)
  • 1 tsp vanilla (optional)
  • 1 cup mini chocolate chips


  • Mix oats, walnuts and flax seeds in a food processor until crumbly.
  • Add peanut butter, honey, coconut oil, chia seeds and vanilla. Mix again in food processor until it holds together.
  • Add the chocolate chips, and stir together and form into balls. Store in the refrigerator.
