This recipe makes a great salad for potlucks or just an easy summer meal.
Ingredients
- 1 can lentils (15 oz)
- 1 jar Kalamata olives
- 1 jar capers
- 1 jar roasted red peppers (diced or sliced)
- 1 jar mild banana peppers (diced or sliced)
- 1 pint grape tomatoes (halved)
- 1 tbsp apple cider vinegar (or red wine vinegar)
- Feta cheese (optional)
Instructions
- Drain all ingredients in a colander, except for the tomatoes.
- Toss all ingredients in a bowl and add the vinegar. Let it set in the fridge for a couple of hours or overnight.
- Top with feta cheese crumbles just before serving.
