PCG Foods: Summer Lentil Salad

This recipe makes a great salad for potlucks or just an easy summer meal.

Ingredients

  • 1 can lentils (15 oz)
  • 1 jar Kalamata olives
  • 1 jar capers
  • 1 jar roasted red peppers (diced or sliced)
  • 1 jar mild banana peppers (diced or sliced)
  • 1 pint grape tomatoes (halved)
  • 1 tbsp apple cider vinegar (or red wine vinegar)
  • Feta cheese (optional)

Instructions

  • Drain all ingredients in a colander, except for the tomatoes.
  • Toss all ingredients in a bowl and add the vinegar. Let it set in the fridge for a couple of hours or overnight.
  • Top with feta cheese crumbles just before serving.
