These granola bars are lovingly prepared by kitchen staff to help fuel campers during the Summer Educational Program. Try them out for a delicious snack! (Yields one half pan, 30 bars)
Ingredients
LIQUID INGREDIENTS
- 1 cup dates, pits removed, chopped
- 1 cup butter, melted
¾ cup honey
DRY INGREDIENTS
- 1½ cups all purpose flour
- 4 cups rolled oats
- 1¼ cup granola
- 1 cup unsweetened desiccated coconut
- 1 cup dried cranberries
- ½ cup semi-sweet chocolate chips (optional)
- ½ cup flax meal (optional)
- ½ cup sliced almonds
- 1½ Tbsp cinnamon
- ½ tsp salt
Instructions
- Line a sheet pan with parchment paper and lightly spray with coconut oil.
- Melt the butter, and add the honey and dates. Blend together with the immersion blender. Set aside.
- Combine flour, oats, granola, coconut, dried cranberries, chocolate chips, flax meal, sliced almonds, cinnamon and salt in a mixing bowl. Mix together with a whisk or spoon until well combined.
- Add wet ingredients to dry mix. Mix with a large spoon or spatula until well combined and there are no pockets of dry ingredients.
- Spread the mixture onto the prepared sheet pan. Pat the mixture flat, compressing into an even layer.
- Bake at 350°F, for 20-24 minutes or until golden brown.
- Let cool completely before cutting. For tidiest slices, chill cooled granola bar sheet pans in the refrigerator before cutting into 30 pieces.
- Once cut, wrap individual bars with plastic wrap, or put into Ziplock bags.
