PCG Foods: Arugula Salad With Beets

The Furmanski family goes out to their garden in Florida several times a week to make this delicious, unique and simple dish.

Ingredients

  • Arugula
  • Boiled beets (warmed)
  • Goat cheese
  • Crushed pistachios
  • Balsamic Vinegar

Instructions

  • Combine in preferred quantities and enjoy on its own or in a smaller portion as a side to a larger meal. Perhaps try planting your own arugula and beets in a standard garden or container garden.

I have been making it for years and always enjoy it each time. Thank you for the reminder to grow them if you have space especially in your flower bed. What a great idea.
